Skinless, boneless chicken breast fillets. Butterfly them for a fast grill, or roast whole and slice for salads and sandwiches.
Chicken breast cut into even strips so they cook in minutes. Marinate for ten minutes if you have them, then straight into a hot pan.
Chicken breast diced to an even size, so a curry, a tray bake or a skewer cooks through at the same time.
Salmon three ways, and prawns ready for the pan.
Salmon fillet with the skin on. Start it skin-side down in a hot pan and let the skin do the work; the flesh stays soft above it.
Skinless salmon fillet. Bake it in a parcel, poach it gently, or sear it for a salad; nothing to peel off at the table.
Skinless salmon cut into even cubes. Quick to cook and hard to overcook if you keep the heat high and the time short.
Peeled raw prawns. They cook in a few minutes and are done the moment they turn pink and opaque; take them off the heat a beat early.
